Filipino Recipes – Morcon Recipe – Pinoy Food

Being considered a holiday dish in the Philippines, you will often see morcon served during the festive season of Christmas and New Year. It is a meat-roll stuffed with egg, cheese, pickles, carrots, hotdogs or sausages.
Filipinos believe that serving round-shaped foods during the New Year will bring luck and prosperity. So that explains why morcon is ever-present on most tables when families welcome the arrival of yet another New Year because it is round-shaped when sliced.
Ingredients:
- 1 kilo beef (thinly sliced)
- 4 slices pork fat
- 2 slices ham
- 2 pcs sausage (Bilbao or Vienna)
- 2 eggs (hard-boiled)
- 10 pepper-corns
- 12 olives
- ½ bay leaf (Laurel)
- 3 tomatoes
- 1 whole onion
- 2 segments garlic
- 1 cup tomato sauce
- ¼ cup vinegar
- 2 cups water
- Salt (to taste)
Cooking Instructions:
- Cut the beef thin about 12 by 16 inches then pound to flatten it. Pound the garlic and peppercorns then add the vinegar. Soak the beef in the vinegar mixture for a few minutes.
- Cut hard-boiled eggs into halves. Cut the ham, sausage and pork fat into long strips and chop the olives.
- Spread the beef on a wooden board. Arrange the ham, sausage and pork fat in alternate rows. Arrange the eggs and add the olives. Roll and tie with string.
- Fry in deep hot fat until brown.
- In the vinegar mixture used to soak the beef, add water, bay leaf, onion, tomatoes and salt. Add the deep-fried beef roll. Simmer until tender.
- Add the tomato sauce and continue cooking for 2-3 minutes. Remove the roll and cut into slices.
- Arrange on a platter and pour the sauce over the meat. Garnish and serve.

Giniling or ground meat is a popular recipe for small eateries along the street sides as well as in cafeterias and small restaurants. There are many reasons why it is well-loved by many Filipinos, topmost is the satisfying blend of ingredients that would surely fill an empty stomach. It can be taken any time of the day especially lunch when Filipinos are known to eat to their hearts desire.
Ingredients:
- 1 lb. lean ground beef
- 4 cloves of garlic (peeled and smashed)
- 1 small tomato (diced)
- 1 small onion (diced)
- ½ yellow bell pepper (diced)
- ½ red bell pepper (diced)
- ½ cup frozen green peas
- ½ cup carrots (diced)
- 1 cup of potatoes (diced)
- 2 tbsp Annatto seeds (atsuwete)
- 1 tbsp fish sauce (Rufina brand) Patis
- 2 tbsp soy sauce
- corn oil
- ½ tsp MSG (vetsin), optional
- ½ tsp black pepper (ground)
Cooking Procedure:
- Place 2 tablespoons of corn oil in a small pot and add the Annatto seeds. Heat until the oil becomes dark red then take out from the heat. Avoid burning the seed.
- Cook the ground beef in a pan then drain.
- Sauté the garlic for 3 minutes then add the tomatoes, onions, black pepper, fish sauce and MSG. Cook on medium high heat for about 2 minutes.
- Add the green peas, carrots, potatoes and soy sauce. Stir to mix ingredients and cover while simmering for about a minute or two.
- Add the colored corn oil prepared earlier from the annatto seeds using a strainer and mix well. Cover again and cook over medium low heat for another 5 minutes.
- Add bell pepper and mix ingredients well. Add salt and pepper if you want to adjust the taste. Cover and go on cooking for 2 more minutes.
- Serve as toppings for plain white rice.
Filipino Recipes – Estofado Recipe – Pinoy Food

Estofado is a special beef recipe that you cannot find during regular days because of the amount of preparation required. It is usually prepared during fiestas and special occasions like weddings, birthdays and reunions that are held during the summer months when school is out. Because the beef is cooked to a chewy tenderness, it is loved by both the kiddies and the oldies. Even if there are a lot of dishes set on the table during special occasions, you will surely find the estofado being the first to disappear because it is so delicious thus making it too hard to resist.
Ingredients:
- 1 kilo boneless beef
- 2 cups Baguio beans (cut into convenient lengths)
- 2 small carrots (peeled and quartered)
- 1 cup chopped tomatoes
- 2 onions (chopped finely)
- ½ cup vinegar
- 2 cloves garlic (pounded)
- 1 bay leaf
- 6 small onions (peeled but whole)
- 1 tbsp flour
- cooking oil
- salt and pepper (to taste)
Cooking Procedure:
- Rub the beef with flour. Season with salt and pepper to taste.
- Fry in cooking oil until color turns brown then set aside.
- Using the remaining oil, sauté the garlic until it turns brown then add the onions and tomatoes. Cover and simmer for about 5 minutes.
- Place the meat in a pan and cover with tomato mixture, bay leaf, vinegar and a small amount of water just enough to cover the meat. Add salt and pepper to taste. Cover the pan and bring to a boil. Add the 6 peeled whole onions, beans and carrots then allow to simmer.
- Take out from the pan when the vegetables are cooked. Arrange the beef in a serving platter and surround with the vegetables.
- Simmer down the sauce to desired quantity and thicken with flour. Pour the sauce over the beef and vegetables then serve.
Filipino Recipes – Beef Caldereta Recipe – Pinoy Food

Caldereta is a very filling and rich meat stew which is famous in the Philippines. Traditional cooking uses goat meat in a thick tomato base. But there are different versions in cooking caldereta like this beef caldereta recipe. Every Filipino family has their own special twist to the recipe and the secrets are mostly passed from generation to generation. Try experimenting by using different vegetables for the ingredients. This delicious beef recipe is usually prepared during fiestas, birthdays and other special occasions.
Ingredients:
- Carrots – 1 piece, medium, cut into cubes and fried
- Potatoes – 2 pieces, medium, cut into cubes and fried
- Pepper and salt – to taste
- Cheddar cheese – ¼ cup, grated
- Liver spread – 1 can (85g)
- Tomato sauce – 1 pack (250ml)
- Pickle relish – 1 tbsp
- Onion – ¼ cup, chopped
- Garlic – 2 tbsp, minced
- Cooking oil – 2 tbsp
- Maggi Magic Sarap – 2 packs (8g)
- Onion – 2 small pieces, sliced
- Beef ribs – 1 kg
- Pineapple juice – 2 cups, unsweetened
Cooking Procedure:
- Combine onions, pineapple juice, Maggi Magic Sarap and beef in a medium-sized pan. Bring to a brisk boil. Lower the heat. Simmer the beef for approximately 2 hours until it becomes tender. Set aside.
- Heat oil in a separate pan. Sauté onions and garlic for about 1 minute. Add the beef and its broth. Bring to a slow boil.
- Add cheddar cheese, liver spread, tomato sauce and pickle relish. Allow the mixture to simmer until the sauce thickens slightly. Season with pepper and salt.
- Add the carrots and potatoes. Cook for an additional 5 minutes.
Filipino Recipes – Beef Mechado Recipe- Pinoy Food

This beef mechado recipe is one of my family’s favorites. Whenever I ask them what they want for dinner, they always answer in unison “Beef Mechado”! It is very easy to prepare and what you will have is a sumptuous meal. I always feel that my effort is not wasted every time I see satisfied smiles on their faces after dinner.
Ingredients:
- 1 kilo of beef cut into chunks
- 1/8 kilo of pork fat cut into strips
- 1 medium sized carrot, sliced in 1/2″ sections
- 5 medium potatoes, quartered (optional: fried)
- 4 onions, peeled and quartered
- 2 red bell pepper, sliced
- 3 bay leaves (laurel leaves)
- 2 cups beef stock or 2 bouillon cubes dissolved in water
- 2 cups tomato sauce or 1/2 cup tomato paste
- 1 cup soy sauce
- 1/4 -cup vinegar
- salt & pepper to taste
Cooking Instructions:
- Make a slit on the chunks of beef. In the middle of the cut, insert a strip of pork.
- Place the beef with the fat in a casserole. Then add the beef stock, soy sauce, tomato sauce and bay leaves. Place over medium-high heat until it comes to a boil. Allow to simmer until the beef becomes tender when tested with a fork.
- Pour in the vinegar and let boil for an additional 2 minutes.
- Add the bell pepper, carrots, potatoes and onions.
- Simmer under low heat until the carrots and potatoes are thoroughly cooked. Stir occasionally in order to thicken the sauce.
- Best served with plain white rice while hot.
Tips:
- For faster cooking time, it is best to cook the beef with the beef stock using a pressure cooker.
- Before adding to the casserole, fry the potatoes first.
- For added flavor, you can add and stir in 2-3 tablespoons of olive oil.
