There is a superstition that pansit (or noodles) can add to one’s long life. That is why pansit is commonly served during birthdays. It is also a typical dish prepared during special occasions like weddings and holidays. If you are a noodle lover, you will surely be delighted with this pancit canton recipe which is truly a satisfying and delicious treat. You do not have to wait for a special occasion to try this dish.

Ingredients:

  • 12 ounces pansit canton noodles
  • 1/2 pound shrimps (shelled and deveined)
  • 4 cups chicken broth (from boiled breast)
  • 1 chicken breast (cooked and shredded)
  • 1/2 pound pork (sliced into small pieces)
  • 1/4 cup diced scallions
  • 1 carrot (diced)
  • 1 cup sliced celery
  • 2 cups cabbage (sliced into strips)
  • 2 cups snow peas (sitsaro)
  • cauliflower (cut into bits)
  • 1/2 cup sliced Chinese sausages
  • 2 tablespoons minced garlic
  • 1/2 cup chopped onion
  • 4 tablespoons cooking oil
  • 1 tablespoon sesame oil
  • 4 tablespoons soy sauce
  • Salt and pepper (to taste)

Instructions:

  • Heat oil in a big pan then sauté the onions and garlic. Add the sliced pork and cook until pork is well cooked.
  • Pour in 2 cups of chicken broth. Add the shrimps, shredded chicken, sliced Chinese sausages, diced carrot, celery, cabbage, and the snow peas. Simmer until cooked, takes about 10 minutes.
  • Pour in the remaining 2 cups of chicken broth then add the pancit canton noodles. Simmer until the noodles become soft.
  • Add the sesame oil and scallions. Add salt and pepper for flavor.
  • Serve while hot.
